1 tablespoon melted coconut oil
½ cup coconut sugar
1 teaspoon vanilla extract or ½ teaspoon almond extract
1 egg or 2 egg whites or vegan option: 1 flax egg
⅓ cup unsweetened cocoa powder
1 teaspoon baking soda
1 pinch-¼ teaspoon sea salt
⅓ cup dark chocolate chips or healthy option: ⅓ cup pure cacao nibs

Directions:

Preheat oven to 350 degrees.  Combine dry ingredients in a bowl: sugar, cocoa powder, baking soda, salt.  Add in almond butter, coconut oil, vanilla, egg and mix well.  Roll into small balls and flatten the top for desired size (cookies only expand a little in the oven).  Bake for 7-8 minutes.  Let cool on cooling rack and sprinkle sea salt on top for added flavor.
